Pannekoek (pancake)

Dutch pancakes (pannekoeken) are usually larger than American or Scottish pancakes and thicker than the French crêpes. They may incorporate slices of smoked bacon, apples or other fruits, cheese or raisins.

Poffertjes look like small pancakes, but they are much thicker and have a light spongey texture. They are served with powdered sugar and butter.

Herring, the sushi of Holland. The passion for raw herring is one of the rare things that visitors of Holland often fail to appreciate. Herring has traditionally been eaten salted in Holland. Hering is an oily fish found in the shallow temperate waters of the North Pacific and the North Atlantic oceans. Herrings are forage fish moving in vast schools, coming in spring to the shores of Europe where thay are caught, salted and smoked.

A Dutch "uitsmijter" (fried egg) is normally served on top of a slice of buttered bread, often with fried bacon, cold ham or cheese on top, for breakfast or lunch.

Buttermilk is the milk left behind, after churning butter out of cream. It has a thin substance, is thicker than plain milk and is rather sour.

Kroket (crockett)

A kroket (croquette) is a small fried roll containing usually tasty beef or veal ragout, but can be enjoyed in more variations like fish, vegetables, shrimps or cheese. 

Bitterbal

Bitterballen are a smaller version of the kroket. It are deep-fried balls filled with meat-ragout. They are often served as a snack in bars and at receptions. They are usually dipped in mustard. It's delicious with a pint of Dutch beer or a nip of Jenever.
